Kimchi Chorizo Hash

I’m obsessed with Kimchi. I think it tastes BEYOND amazing and it’s so good for you... something I’m trying to cook with more. This is a breakfast or brunch dish made by making a simple red potato hash, adding chorizo, kimchi, and some greens to brighten the flavors, and cooking eggs in that mixture.


  • 1.5 C Spicy Kimchi

  • 8-10 small red potatoes, chopped small

  • 1 Large link of Chorizo, chopped small

  • Handful of spinach greens

  • Olive Oil

  • Eggs

  • Scallions (for garnish)

  • Lemon


  1. Heat 2 TBSP of olive oil in a frying pan

  2. Add chopped red potatoes and season with black pepper. Move potatoes around so they are coated in oil.

  3. Cover pan for 2-3 min to steam the potatoes.

  4. At 8 min or so, add chopped chorizo and mix to combine.

  5. Let chorizo and potato cook for 5 min.

  6. Add kimchi and mix to combine. Let cook for 3 min.

  7. Add spinach and mix in.

  8. Make wells for egg in the mixture and gently drop egg into each well.

  9. Cover until whites of eggs are fully cooked.

  10. Drizzle lemon on top of entire plate.

  11. Garnish with scallions and eat immediately.
