Kimchi Fried-Cauliflower Rice

1 Bag Cauliflower rice (sold at Whole foods or in dairy section of supermarket)
1 bell pepper
1/2 white onion
1/2 Bag Kimchi
1 C peas
Sesame oil or neutral oil for frying
Fried egg for top
Scallions/Sesame seeds for garnish
Any other vegetables you'd like to add! I like this combo but this is your fried rice.
Chop bell pepper and onion and fry for 5 minutes in sesame oil (or a neutral oil if you do not like the taste of sesame).
Add cauliflower and raise the heat so it crisps a bit. Should take 10 min or so.
Add peas and mix to combine
Add soy sauce to taste, I put about 2 TBSP.
Add kimchi and raise heat again.
Let kimchi get hot and slightly crisp (2 min).
Add fried egg, sesame seeds, and scallions to serve.
If you want to make a shape with the rice, press firmly into a bowl. Turn bowl upside down into a plate and shake. If that fails, coat the bowl with water first. Should help the rice to slide out.
